Teriyaki Marinated Mahi Mahi
(Serves 4)

Mahi Mahi ingredients:
4 6-8 ounce mahi mahi filets

Teriyaki Sauce ingredients:
1 cup fresh orange juice
4 ounces brown sugar
½ cup honey
1/2 cup pineapple juice
juice of 2 lemons
1 cup sherry (optional)
1 tablespoon fresh ginger, peeled and minced
1 cup soy sauce
1 tablespoon corn starch

Teriyaki Sauce method:
Place the first 7 ingredients in a medium-sized sauté pan. Add 8 ounces of the soy sauce and bring the mixture to a boil. Mix the cornstarch with the remaining 2 ounces of soy sauce and add to the teriyaki mixture.

To marinate:
Marinate the mahi mahi filets in teriyaki sauce for up to 4 hours.

To cook the filets:
Broil or grill the filets for approximately 5 minutes per side, or until done. Brush with teriyaki sauce before serving.
