Shrimp Sautéed
(Serves 2)

Ingredients:
2 tablespoons olive oil
salt to taste
chili flakes to taste
1 clove garlic sliced, chopped, or minced
(12)   26-30 shrimp – raw, peeled & butterflied
1/4 cup white wine or water
juice of 1/2 lemon
1/2 cup fresh tomatoes, cut into 1/2 inch cubes
2 tablespoons butter
1/4 cup parsley, finely chopped
Optional: pasta of your choice and/or toasted bread

Method:
Place the olive oil in a sauté pan over medium-high heat. While waiting for the pan to get hot, season the shrimp with salt, chili flakes, and garlic. When the pan is hot, add the shrimp, spreading out in the pan so they cook evenly. Cook for half a minute, then turn and cook half a minute more. Add the white wine or water, lemon juice, tomatoes and butter. When the butter has melted, garnish with parsley, toss with pasta, and serve with toasted bread.
