Halibut Poached, Broiled or Grilled (Serves 2) |

Poached Halibut: 3 cups water 3/4 cup sugar ¼ cup salt 2 6-8 ounce fresh halibut filets, boneless and skinless In a medium-sized saucepan, mix together the water, sugar, and salt. Bring to a boil. Add halibut filets and cook for 4-6 minutes. Serve with drawn butter and fresh lemon. Broiled Halibut: 3 tablespoons sugar 1 tablespoon salt 2 tablespoons water 2 6-8 ounce fresh halibut filets, boneless and skinless Make a paste with the sugar, salt, and water. Sear the halibut in a nonstick sauté pan over medium-high heat for 5 seconds on each side. Then cook the halibut on the grill for a total of 6-7 minutes, turning and basting the filets with the sugar-salt water mixture 4 times during the cooking time.
