Fresh Halibut
(Serves 2)

Ingredients:
2-6 oz boneless skinless fresh halibut
1/2 cup all purpose flour
salt and pepper to taste
1/4 teaspoon paprika
1 orange: peeled, seeded, sliced, and diced finely
1/2 cu heavy whipping cream
2 tbsp canola oil
1 tablespoon fresh Italian parsley
1/2 garlic clove, crushed

Method:
Put oil in heavy sauté pan, heat on medium high heat. Season halibut with salt, pepper, and paprika, and dredge in flour. Add halibut to sauté pan, sauté for 3 minutes each side. Remove halibut from pan, wipe pan out with paper towel. Add orange and garlic to pan, sauté for 30 seconds. Add whipping cream, reduce heat by half, cook for 2 minutes. Pour on top of halibut. Garnish with parsley and serve.
